One of the first events of Buonissima 2026 is the CHEF'S Table signed by Christian Mandura, chef at Akoya: Wednesday, October 21, in the brand new Reply House in Turin.
Mandura is one of the most interesting personalities in contemporary Turin cuisine. The Michelin star arrived with Unforgettable, a counter in the Quadrilatero Romano capable of seating a dozen guests at a time; today, however, he helms Akoya, where he offers a gastronomic experience centered on omakase, the Japanese formula that entrusts the chef with the creation of the tasting menu.
Aqua by Christian Mandura, the first format of Reply Immersive Experience: a multisensory performance in six acts where haute cuisine, artificial intelligence, and storytelling meet around the same table. The gastronomic journey arises from a dialogue between the chef and a system of specialized AI agents, while images, sounds, and lights transform the space course after course.
Launched in 2025, CHEF'S Table returns as the program's most intimate event: five dinners for a select few guests, built on close dialogue between chefs, special locations, and menus that showcase the connection between cuisine and art.
Christian Mandura
Born in Turin in 1990, Christian Mandura began his career in Piedmontese trattorias and trained in prominent kitchens, including Del Cambio in Turin and Noma in Copenhagen. In 2015, he opened Geranio in Chieri, where he developed a signature cuisine focused on plant-based dishes. Four years later, he launched Unforgettable, a pioneering project that transcends the boundaries between dining room and kitchen, earning a Michelin star in 2021.
Since 2023, he has collaborated with Reply, exploring the dialogue between artificial intelligence and gastronomy. This research has led to an immersive cuisine project, in which the chef's creativity meets the possibilities offered by AI. His entrepreneurial journey continues with Maison Capriccioli, a seafood restaurant inspired by French tradition, and AKOYA, Turin's first Japanese omakase restaurant, selected by the Michelin Guide less than a year after opening.

Chef's Table takes place in one of the most surprising locations in the new Turin. Reply House is the Reply Group's new Turin headquarters, born from the regeneration of the former De Sonnaz Barracks, a protected architectural heritage site in the heart of the Citadel, redeveloped through an adaptive reuse project by ACPV ARCHITECTS Antonio Citterio Patricia Viel. Inaugurated in July 2026, the late 19th-century military building had been closed to the city for decades and is now a campus where applied AI laboratories, offices, immersive environments, and green spaces coexist with the memory of the site.
