Opened in June 2021 by Alessio, Luca, Paolo and Giovanni. Paltò is a Turin bistro that blends the soul of a wine bar with that of signature cuisine. The restaurant offers a gastronomic journey that starts from Italian tradition, to then explore more daring and personal interpretations, thanks to the experience of the chefs gained in establishments such as Trattoria Zappatori and Scannabue.
In an intimate and informal setting, Paltò stands out for its careful selection of raw materials—with a strong focus on local produce—and for a wine list that highlights small producers, often off the beaten track, but rich in stories to be told in the glass.
