Buatta's chef is Fabio Cardilio: he, a true Roman, has become one of the best interpreters of Palermo's gastronomic culture, because he chose Palermo and Sicily. In all this time, the chef, who boasts a Michelin star earned at Porticello, has refined a knowledge of knowledge and traditions that has allowed him to reach the roots of the culinary heritage of the area. In addition to leading Buatta's kitchen in Palermo, Fabio is the executive chef of Buatta's headquarters at Via Stampatori in Turin together with head chef Enrico Zanirato.
