Being in a 16th century historic center, right on the Via del Sale, led me to re-evaluate and exalt the dishes of this tradition: anchovies are never missing, some poor dishes reinterpreted become a classic like the lake carbonara, where sturgeon takes the place of guanciale.
Vegetables, eggs, meat, fish, come from the local valley markets.
Wine: wherever I can get to.
We like conviviality, 5 tables, good music, lots of wine, a concrete cuisine made of raw materials.
