The place

Nestled in the heart of the mountains, our bistro was born from a desire to tell the story of our region through food. Our cuisine is deeply rooted in Occitan tradition, showcasing the authentic flavors and recipes of an ancient culture, reinterpreting them with simplicity and respect.
We believe in ethical and sustainable gastronomy: every dish we serve is the result of a direct connection with the land and those who cultivate it. We use only seasonal ingredients, sourced from local farms and artisanal businesses, carefully selected for their quality and commitment to environmentally friendly practices.
Our offerings change with the natural rhythm of the seasons, because we believe that nature's rhythm is the primary ingredient of good food. Among our specialties, you'll find mountain cheeses, vegetables grown on small mountain plots, traditional cured meats, wild herbs, and ancient flours.
For us, cooking means preserving the memory of the valleys, but also creating a convivial and authentic experience, where every dish speaks the language of the mountains.
