Ded Gaci's culinary philosophy is based on authenticity, seasonality, and thoughtful influences. For him, each dish is first and foremost a tribute to the Piedmont region: the ingredients are carefully selected, often sourced from small local producers or Slow Food Presidia, respecting the seasons and offering authentic flavors.
But authentic doesn't mean retro: Gaci loves experimenting with unusual combinations, bringing an international touch where needed, reinventing classic recipes without distorting them.
The goal is to offer cuisine that excites yet remains understandable, that surprises but doesn't confuse; that invites you to return not just to savor a dish, but to feel part of an authentic, warm, and inclusive experience. Ded Gaci believes that cuisine should tell stories, evoke memories, but also look forward: it's the dialogue between roots and vision that brings his work to life.
