Dù Cesari is a corner of Romanity transplanted to Turin.
Chef and owner Danilo Pelliccia adds two ingredients to the trio Tradition, Typicality and Territory: Inspiration and Hospitality. This fusion is evident in his dishes and in their, only apparent, simplicity.
He introduced Turin residents to the habit of the second evening shift, harmonizing the Roman gastronomic culture with that of Savoy.
The signature dish is carbonara, offered both in its classic form and in innovative interpretations such as the version with truffle, with Iberian ham, enriched with artichokes, or in the variant with egg carbonara.
