Tiziana Francoforte, born in 1987, trained as Sous Chef by Gagini alongside Mauricio Zillo from 2020 to 2021, is at the helm of Aja Mola. And the accumulated experience is instantly perceived, mixing with a very respectable 'Sicilian-style' welcome, where professionalism runs parallel to intimacy, created by visits to the table by the Chef herself between courses, never invasive and above all 'real', thoughtful: it is not a ritual, it never seems constructed, the truth is that Tiziana cares, and she really does care. In fact, her cuisine is authentic, close, with meticulous respect for the raw material made exclusively from local fish. The dishes come from ancient Sicilian inspiration, yet they are all contemporary, undergoing an elaboration that does not alter the essence of the product in any way, but rather elevates it to the level of Haute Cuisine.
