Nicolai Nørregaard, born 1979, is the Head Chef and co-owner of the restaurant Kadeau, in Copenhagen and Bornholm. Born and raised on the island of Bornholm, a small island in the Baltic Sea, as a child he was influenced by the cooking of his grandfather, who grew and produced his own vegetables and caught most of the fish and shellfish he used in the kitchen, as well as preserving the ingredients in order to be completely self-sufficient. Nørregaard has achieved two Michelin stars and a green star for virtuous behavior in the area of sustainability.
