Corrado Assenza is one of the most important, influential and well-known Italian pastry chefs, certainly the best-known among the Sicilian ones.
His business developed mainly around Caffè Sicilia, a family business opened in 1892 where Assenza first entered as a waiter, later becoming the point of reference. One of the pivots on which his work moves is the representation of the territory.
