Biography
Claudio Vicina, Chef of Casa Vicina, with his brother Stefano, represents the fourth generation of a family that has been working in the restaurant business for over a century.
A training course with great masters such as Rolando Morandin, Gualtieri Marchesi, Guido Alciati and in 2002 the coveted recognition of the Michelin Star. In creating the dishes Claudio is inspired by his grandmother Amelia, who taught him the value of memory and respect for traditions, and by his mother Bruna who passed on to him the culinary culture of her origins: a perfect mix of Tuscany, Liguria and Val D'Aosta. Among the iconic dishes are the “bagna caoda da bere” and the “rabbit tuna with sweet and sour giardiniera”.
