The career of Paolo Griffa, a young and talented Piedmontese chef, has been a journey through the kitchens of excellence. From Combal.Zero and Piccolo Lago in Italy, to Le Chateaubriand and Serge Vieira in France, to Studio in Copenhagen. Each experience has forged his personal and recognizable style. Executive chef at the Grand Hotel Royal and Golf in Courmayeur. In the latter he earned his first Michelin star in 2019.
In 2022 Paolo Griffa opens at Caffè Nazionale in Aosta. In two months the restaurant received its first Michelin star. Griffa's philosophy is clear: cooking is sharing.
