Valentina Rizzo, 34, is one of the talents of Puglia’s gastronomy. Chef of Farmacia dei Sani in Lecce, together with her brothers she has managed to transform the family restaurant into an outpost of contemporary Puglian cuisine.
He learned precision at the Lopriore school but his is a cuisine that has its roots planted in the family, in mothers, in grandmothers. After a Scottish experience he developed the Cunserva project, and the study of ancient methods of conservation is applied to the products of his land.
