Biography
In love and melancholy with his Liguria, a student of Ezio Santin, he frequented some of the greatest Italian and international restaurants, which from a very young age allowed him to glimpse his enormous talent, codifying it over time through a personal style, today defined as inimitable.
Taglienti's cuisine is based on inspirations and intuitions, unexpected mental flashes that transform into new flavors guided by elegance and gestures.
Through a poetic and artistic vision, he redraws the features of the already known; “changing everything without changing anything” he gives life to a sensitive cuisine where the narration of an emotion, a feeling, a memory or a fragment of life leads him towards a precise gustatory and experiential logic. Taglienti is today able to move with the same excellence and paradoxical coherence between different cuisines, from uncompromising classicism to the most unbridled avant-garde, passing through hunting, his favorite subject, to sensitivity towards the plant world and finally the rediscovery of tradition and forgotten recipes.
Lemon, his fetish ingredient and brand, was in hindsight his gastronomic vision, the unexpected element that allows him to combine the past with the present, the classic with the modern, transforming the taste experience into an extraordinary moment, based on emotion, the only true common language for all.
Luigi Taglienti is an internationally recognized Chef. Enthusiastic and a dreamer, he lives his passion and has made it his life mission.
Ambitious in his creations, with audacity, he continues in his incessant experimentation towards the quintessence of taste.
It has held a Michelin star since 2008.
