Gabriele Bertolo, born in 1997, brings the Piedmont of his origins to the kitchen, a place of experimentation and growth since he was a child.
Turin is the land of his first professional training, more precisely in the IPSSAR Giuseppina Colombatto institute. From there he began his entry into the kitchens of Italy and Europe, between Piedmont, England and France. He moved to Strasbourg for two years, working at the La Casserole restaurant, before returning permanently to Italy and joining the Cannavacciuolo Group for the first time.
The Cannavacciuolo Bistrot in Novara welcomed him as a Commis de cuisine: there he began to learn about Chef Antonino's cooking, but it was his arrival at Villa Crespi as Chef de Partie that allowed him to fully learn his entire philosophy. His journey within the Group did not stop, taking him to Laqua Vineyard in Casanova (PI) and Laqua Countryside in Ticciano (NA), 1 Michelin star restaurants. His growth and desire to improve did not go unnoticed, so much so that he was able to return to Turin where his professional journey began, this time as Executive Chef of the Cannavacciuolo Bistrot.
