Antonio Chiodi Latini is a chef, he has always been one, but at a certain point in his career he decided to stop and look critically at what he was doing. And he changed direction. The fruits of the earth were a revelation: a new raw material to look at with curiosity and renewed enthusiasm. Something to study, to rediscover, to taste with new eyes.
What Antonio Chiodi Latini is carrying forward in his continuous process of research and experimentation is an underground movement, a philosophical-cultural approach different from the past, which works underground to bring out a new idea and a new form of gastronomy, of cooking, of nutrition that does without products of animal origin.
His is a work of cooking, but he also and above all has the will to implement a process of dissemination, a source of study and research on the raw plant material: a bio-inspired cuisine, which is inspired by life, analyzing its evolution in maturation and drawing new knowledge from it. A philosophy of sharing, which he carries forward with the help of those we consider the disciples of the earth, our suppliers: realities that are a source of inspiration and daily growth.
