Chiara Patracchini's encounter with cooking is a fortuitous encounter. An aspiring nurse, she decides at the last minute, on her mother's advice, to opt for the Colombatto hotel institute. She immediately combines her studies with practical work at some restaurants in the area, but as often happens, she is put in the dining room and discovers at her own expense how difficult it is to assert oneself in the restaurant environment, especially for a woman who also aspires to have a job in the kitchen.
1998 is the year of the turning point. Chiara has yet to finish her studies at Colombatto and Giovanni Grasso, owner of the restaurant La Credenza, in that year collaborates as a teacher at the hotel school and is looking for staff in the kitchen.
Even though she is very young, Chiara stands out for her spirit of sacrifice and passion and Giovanni asks her to do a trial period at La Credenza.
Alongside Giovanni and Igor, Chiara learns all the secrets of the “trade”; she initially dedicates herself to appetizers and first courses and then subsequently delves into all the important aspects of a kitchen.
Her qualities are immediately appreciated by all the staff. Chiara is the right person.
Thus began her adventure at La Credenza. More than twenty years have passed since that beginning, years during which Chiara has developed her passion for pastry making and accumulated experience both in Italy and abroad to follow the numerous promotions of the CREDENZA GROUP: Jakarta, New York, Brussels, Copenhagen and Montreal just to name a few.
Also important was her 6-year collaboration with the magazine Sale e Pepe, where Chiara was the owner of a column “La Dolce vita di Chiara” entirely dedicated to desserts and later transformed into a collection of recipes.
Her creations are today a perfect balance between sweet and savory, recipes that can tease the palate, leaving room for a touch of femininity. An unmistakable style that has led her to be considered today one of the best pastry chefs in Italy.
Together with Ivan Onorato, Chiara is now chef at the restaurant La Credenza and responsible for the dessert menu.
Ivan Honored
Born in Turin in 1982, Ivan began his experience in the kitchen very early, at the age of just fifteen, in Davide Oldani's restaurant (1 Michelin star).
At 17, he worked in what was, at the time, the only starred restaurant in Turin, Balbo. After completing his education at the Giuseppina Colombatto hotel management institute, on September 13, 2001, he left for London.
For him it was a gamble: he had no contacts and no job!
He immediately found one in the restaurant of Marco Pierre White, Gordon Ramsey's teacher, and then moved on to London, first in the restaurants of Ramsey himself, and then Alain Ducase.
The bet was won and his career in the kitchen began.
He returned to Italy for military service and, immediately afterwards, moved to France, to Reims, where he worked for a period in the Château Les Crayères restaurant which at the time boasted three Michelin stars.
Strengthened by these experiences that allowed him to grow professionally and personally, he decided to return to Italy and look for a restaurant where he could capitalize on his experiences and begin to develop his own personal cooking thoughts. In 2008 he arrived at La Credenza, another starred restaurant, where under the guidance of Igor Macchia, now Corporate chef of the CREDENZAGROUP, he developed a rigorous and elegant style made of memory and recollections, the evolution of a multifaceted cuisine where research becomes a tool to express one's emotions.
