Born in 1977, Peruvian chef Virgilio Martinez is recognized throughout the world.
After training as a lawyer in Lima, he began his culinary career in Canada when he enrolled in courses at Cordon Bleu. This study continued in London, followed by training in restaurants around the world.
Its flagship restaurant, Central, in Lima offers a sensory journey inspired by altitudes and ecosystems, and was ranked No. 1 in the World’s 50 Best Restaurants in 2023.
In addition to Central, Martinez is the founder of MIL in Cusco and MAZ, in Tokyo; Martinez is also the co-creator, together with Malena Martinez, by Mater Organization.
