Oysters and Champagne are the perfect fit, ça va sans dire. But what are the real reasons why the pairing of these two products is the delight of the most passionate gastronomers? First and foremost, the reasons are organoleptic, of course. But there are also historic and cultural reasons. We will be talking about them at the workshop on 30th October at 4 pm at Combo.
We will begin with a general overview of oysters and champagne, then we will analyze the characteristics of Millesimé 2015 Jean Philippe Trousset, which was selected for this pairing, and Tsarskaya and Belon des Hermelles oysters (and why the two products are a perfect match). Finally – because we save the best for last – we will get to action: tasting the perfect pairing of these two wonderful products.
The workshop will be held by Mauro Bollero, sommelier Ais and ambassador for Alberto Massucco Champagne, and by oyster sommeliers Mariangela and Francesca Lugli from Red Oyster. Cinzia Zanellato will introduce the champagnes selected for the workshop by Alberto Massucco.
