To make risotto, you normally make meat stock, then make a soffritto, roast rice, pour white wine and then slowly add the stock. It is a complex process that usually results in risotto being made only on Sundays or great occasions.
In this workshop Maria Nava Rondolino will prove that, on the contrary, starting from a high-quality rice you can achieve a creamy risotto, skipping all those lengthy procedures and quickly cooking it in a pot.
